Purpose
1.Destory the cellular structure:oils and fats contained in the cells which have tough cell wall,of extract oils and fats from cells,need to destory the cell wall.
2.Shorten the oil-way:after flake the particles of oil seed into thin slices,shortened the oil-way that oils and fats from the oil seed,making the advantageous condition for pressing and solvent extraction.
3.It is good for steam cooking.Flaking can increase the surface area of oil seed,reduce the thickness.It is not only easy to absorb moisture and heat,but also easy for evaporation of water.
